Beer, wine, and liquor – we love it all – and we love to cook with it all at City Spirits Liquors! That’s why we’re posting our favorite recipe for a traditional favorite – potato beer cheese soup!

This soup is rich, creamy, and hearty! While it can be enjoyed during any season in New England, it’s especially great on a mild, late-summer evening. Ingredients

2 pounds of potatoes (red potatoes/Yukon gold preferred, but any will work) peeled and cubed

1 small sweet red onion, diced

2 cups chicken, beef, or veggie broth (if you must use water, add 2 bouillon cubes)

1 ½ cups of 2% milk

1 cup of beer (pale ale or wheat beers preferred)

¾ tsp salt

½ tsp ground mustard

½ tsp white pepper or tellicherry pepper

2 tbsp Worcestershire sauce

2 cups of shredded cheddar cheese

Crumbled cooked bacon and salad croutons to taste (optional, but recommended)

 

Step-by-step instructions

  1. Begin by placing the potatoes, onion, and broth in a large saucepan. Bring to a boil over high heat. Then, reduce heat and cover. Cook for 15-20 minutes, or until onions and potatoes are tender.
  2. Remove from heat. Do not drain, but cool slightly.
  3. Add the cooked mixture to a blender and mix in batches, or use a stick/immersion blender to mix until smooth. Return it to the pan and heat on medium.
  4. Add the beer, milk, salt, mustard, pepper, and Worcestershire sauce to the mixture. Heat through.
  5. When heated, stir in the cheese until it melts. Top with croutons and bacon, to taste. Serve.
